Reduce heat to medium-low. In same pan as walnuts, add in cream cheese and blue cheese, stirring constantly until melted and creamy. Spread into a small casserole dish or serving dish. Set aside.
In another small non-stick pan over medium-low heat, melt remaining 2 Tablespoons of butter. Add in bread crumbs, garlic powder, and parsley. Stir until bread crumbs are lightly toasted, around 3-4 minutes.
Spread toasted bread crumb mixture over blue cheese mixture. Serve while warm with crackers, celery, crusty bread, and sliced green apples.
Notes
I've also used pecans in this recipe and it's just as good. If you have nut allergies, just leave the nuts out!Sometimes after I've assembled everything, I put this mixture in oven at 350°F for 5-10 minutes until the cheese mixture starts to bubble around the edges of the bread crumbs and the bread crumbs are a little more toasted. (It's great without baking it, too!)
