This filling Greek pasta salad with feta cheese, cucumbers, olives and tomatoes is a quick side dish recipe for dinner, easy make-ahead potluck party recipe, or great for leftovers for lunch salad the next day!

Ingredients
116-ounce boxRotini pasta
1cupcherry tomatoeshalved
1cupcucumberschopped
1/2cupred onionchopped
1/2cupblack olivessliced
1cupFeta cheesecrumbled
1cup Greek vinaigrette dressing(favorite, store-bought brand) + more, if needed
Salt & pepperto taste
Instructions
Cook rotini pasta al dente, about 8-10 minutes. Drain and place in large serving bowl. Allow to cool.
To the pasta bowl, add the cherry tomatoes, cucumbers, red onion, and black olives. Stir.
Pour the Greek dressing over the top. Add salt and pepper, to taste. Stir to combine all ingredients. (Add more Greek dressing, if needed)
Add half of the feta cheese and stir. Top with rest of the feta cheese. Serve immediately.
Store in an airtight container in the refrigerator for up to 4 days. Add more dressing and stir before serving again.
Notes
This recipe is good as a make-ahead recipe the night before. You may need to add a little more dressing after refrigerating. Be sure to stir completely before serving.
