Ingredients
1 cupAll-purpose flour
2teaspoonsBaking powder
1/2teaspoonSalt
1TablespoonUnsalted butterchilled
1/4cupMilk
Pepperto taste
Instructions
In a medium mixing bowl, stir together flour, baking powder, and salt. Add pepper to taste.
Into the dry mix, cut in the unsalted butter until the mixture is crumbly and butter pieces are no larger than pea-sized. (I just use a fork to cut in the butter a little at a time, but you can use a pastry cutter or even your fingers.)
Stir in 1/4 cup of milk, a little at a time, until the dough is completely mixed. Dough consistency should be firm enough (not runny) that it can be spooned into the soup without falling apart or separating. (You may need a little less or a little more milk.)
Drop dumplings into soup or stew by spoonfuls in the last 15 minutes of cooking, taking care not to let them touch (if possible). This recipe will make about 8 medium sized dumplings, but you can drop smaller spoonfuls if you want more. Place lid on soup and cook for 15 minutes or until dumplings are no longer doughy inside. (*SEE NOTES BELOW FOR COOK TIME TIPS.)
Spoon soup into bowl and then top with cooked dumplings. Serve immediately.
Notes
*STOVETOP SOUP: Bring soup to a full simmer right before adding dumplings. Drop into soup, place lid on pot, and cook for the last 15 minutes of the recipe. CROCK POT SOUP: For the last 30-40 minutes of a crockpot recipe, drop in dumplings by the spoonful. Replace lid on crockpot and cook for the remaining 30 minutes of the recipe. (You may need to cook longer, around 40 minutes, if you make larger dumplings). You can test doneness with a toothpick that comes out clean (and not dough-y).When to add dumplings to chicken and dumplings?Follow your chicken and dumplings recipe, make sure chicken is cooked, shredded and added back in. In the last 15 minutes of cooking your chicken and broth, add in the dumplings. (This is the same as the stovetop recipe above.)NOTE: If your dumplings disappear when you drop them into the soup, don't worry! They'll pop back up as they start to cook.
