Ingredients
116 ounceWhipped toppingthawed
23 ounceOrange gelatin powderlike Jell-O
116 ounceCottage cheeselarge curd (full fat)
120 ounceCrushed pineappledrained
115 ounce Mandarin orangesin juice, drained, and cut in half
Instructions
In a large mixing bowl, combine thawed whipped topping and orange gelatin powder. Stir until completely combined.
Fold in cottage cheese, drained crushed pineapple and drained mandarin orange pieces. Gently stir until completely combined.
Cover and chill at least 1 hour in the refrigerator or overnight. (It is better the next day, in my opinion.) If it seems watery when removed from the refrigerator, just stir.
OPTIONAL: If serving for a party, smooth the top with a spoon and add whole Mandarin oranges to the top before serving.
Store in an airtight container for up to 5 days. (It may seem watery, just stir upon removing.)
Notes
Some people add mini marshmallows (1 cup) or chopped nuts like pecans or walnuts. I like it with those items, too, but this is the original recipe the way my mom makes it.
