Ingredients
1bunch asparagus(about 1 to 1 1/2 pounds)
1Tablespoonolive oil
1Tablespoonbutter
1Tablespoongarlic minced (about 2-3 cloves)
saltto taste
pepper to taste
Instructions
Prepare the asparagus by bending each asparagus spear until they snap. Discard the woody (thicker) ends and rinse the spears. Set aside.
In a large skillet, heat olive oil over medium-high heat. Swirl oil to completely cover skillet.
Add the prepared asparagus in a single layer to the heated oil and cook, turning occasionally, for about 8 minutes*. Do not overcook or the asparagus will become mushy. (The sauteed asparagus should be tender but still crisp.)
Reduce the heat to low and add butter, garlic, salt, and pepper. Cook for 1-2 minutes, or until garlic is soft.
Serve warm immediately.
Notes
*If you're using a thicker asparagus, you may have to sautee a little longer.RECIPE VARIATION: After cooking and right before serving, I sometimes add a squeeze of fresh lemon juice and top with grated parmesan.
