These easy peanut butter cookies use only peanut butter, egg, and sugar, and are ready in no time!

Ingredients
1cup creamy peanut butter
3/4 cup white sugar, plus a little more for topping
1largeegg
Instructions
Preheat oven to 350°F. Cover an ungreased baking sheet with parchment paper or a silicone baking mat.
In a medium mixing bowl, mix together peanut butter, sugar and egg until smooth.
Roll peanut butter mixture into 1-inch balls and place in rows on baking sheet parchment or mat.
Dip a dry fork into white sugar and flatten a cookie ball. Dip the fork in sugar again and then flatten the cookie a different direction, leaving crisscross patterns on top of the cookie dough.*
Bake in preheated oven for 8-10 minutes, or just until the edges are firm. Allow to cool and set before eating.
Store leftover peanut butter cookies in an airtight container for up to a week.
Notes
*You can also just flatten the cookies and then sprinkle them with white sugar before baking. Dipping the fork and doing it this way is just how my mom taught me when I was a kid. (You can also leave the sugar off of the top.)I put that these make about 24 cookies if you make smaller cookie balls, but it may make fewer if you make bigger cookie balls.
