28.5 ounce small boxes of corn meal mixlike Jiffy corn muffin mix
Instructions
Spray crockpot with non-stick spray, or line with crockpot liners.
Mix together all ingredients, pour into crockpot.
Cook on cook on high for 2 hours or on low for 4 hours. **PLEASE SEE NOTES BELOW WITH IMPORTANT COOK TIME INFORMATION**
Serve hot immediately. (I place the crockpot on warm and serve it straight from the crockpot for parties, but keep an eye on it so that the bottom doesn't burn.)
Once cooled, store leftovers in an airtight container in the refrigerator.

IMPORTANT COOKING NOTE:Crockpots cook very differently. I've had crockpots that cooked this classic corn casserole recipe in a little over 2 hours (in oval crockpots). I've had other (round and deep) slow cookers that took 4+ hours.If you're making this for an event (like for Thanksgiving dinner or Christmas menus), I recommend testing this recipe out ahead of time so you can make cooking time adjustments for your own crockpot.
