Ingredients
25*Oreo cookiesNOT Doublestuffed
3Tablespoonsbutter
6cupsmini marshmallows(1 10-ounce bag)
Instructions
Place Oreo cookies in a resealable bag and crush them using the end of rolling pin or a cooking mallet. (Doesn't need to be uniform pieces. I leave the pieces all different sizes.) Reserve about 1/4 cup cup and set aside to sprinkle on top of the cookie bars (or, crush extras for the topping, which is what I do).
Place a piece of foil in the bottom of a 8x8 or 9x9 baking pan with some hanging over the edges. Spray lightly with cooking spray. Set aside.
In a medium size pot over low heat, melt butter.
Add marshmallows to melted butter. Stir until all marshmallows are covered in butter. Continue stirring occasionally until all marshmallows are melted.
Remove from heat and stir in crushed Oreo cookies until completely combined with the marshmallow and butter mixture.
Spray a spatula with cooking spray. Using the spatula, spread cookie marshmallow mixture into prepared pan. Sprinkle additional crushed Oreos on top and lightly press down**. Allow to set up for 10 minutes (or until completely set.) If you're in a hurry, you can place in the freezer to set. Cut into bars and serve.
Store in an airtight container.
Notes
*We like our Oreo bars really chocolatey, so I use around 25 Oreo cookies and then also I crush additional Oreos to sprinkle on top. If you want less chocolate bars (and more marshmallow), use around 18-20 cream cookies.**Sometimes I will also sift a little powdered sugar over the top of the Oreo topping to make them more festive, especially if I'm making them for a Christmas dessert or party treat.
