Cookie Recipe Tips

Cookie Baking Tip

The trick to these cookies is to bake them just until the edges are brown and the cookies are still soft.

(They’ll probably be softer cookies than you’re usually used to baking.)

The cookies will get crispy the more they sit after baking.

 

Use An Ungreased Cookie Sheet

Do not grease the baking sheet! 

I use a silicone baking mat like this, but you can also use parchment paper.

Sugar In Peanut Butter Cookies

Some people like to reduce the amount of sugar used because of the sugar in peanut butter. You can try that, if you want less sugar.

Also, I criss cross the top of the peanut butter cookies with a fork dipped in sugar, but you can leave that off, too.

 

Storing Peanut Butter Cookies

Store these simple peanut butter cookies in an airtight container for up to a week.

How To Make Peanut Butter Cookies

It seems weird, I know, but an easy ration of peanut butter, eggs, and sugar really does make the best peanut butter cookies.

If you’re worried about how much sugar is in a peanut butter cookie (between the white sugar and the sugar in most peanut butter brands), you can easily use less sugar in this recipe and have them come out just as great.

You can also add a teaspoon of vanilla for a richer flavor, but I think they’re good like this.

Simple 3-Ingredient Peanut Butter Cookies

These easy peanut butter cookies use only peanut butter, egg, and sugar, and are ready in no time!

Ingredients

  • 1 cup creamy peanut butter
  • 3/4 cup white sugar, plus a little more for topping
  • 1 large egg

Instructions

  • Preheat oven to 350°F. Cover an ungreased baking sheet with parchment paper or a silicone baking mat.
  • In a medium mixing bowl, mix together peanut butter, sugar and egg until smooth.
  • Roll peanut butter mixture into 1-inch balls and place in rows on baking sheet parchment or mat.
  • Dip a dry fork into white sugar and flatten a cookie ball. Dip the fork in sugar again and then flatten the cookie a different direction, leaving crisscross patterns on top of the cookie dough.*
  • Bake in preheated oven for 8-10 minutes, or just until the edges are firm. Allow to cool and set before eating.
  • Store leftover peanut butter cookies in an airtight container for up to a week.

Notes

*You can also just flatten the cookies and then sprinkle them with white sugar before baking. Dipping the fork and doing it this way is just how my mom taught me when I was a kid. 
(You can also leave the sugar off of the top.)
I put that these make about 24 cookies if you make smaller cookie balls, but it may make fewer if you make bigger cookie balls.
