Ever wonder how seafood restaurants get that drawn butter recipe dip that never melts?
Clarified butter (another name for drawn butter) is an easy recipe for seafood sauce, it just takes a few easy cooking tips to get that no-melt butter for crab legs.
Easy Drawn Butter Recipe
The best tip for making drawn butter at home is to only use real butter (full fat butter). You are separating the milk solids from the water.
If you try to make this with a no-fat butter or butter substitute, you won’t get that melted, rich butter that see you see served with crab legs in restaurants.
So, be sure to use your favorite unsalted butter for this clarifying butter recipe.
For the clarified butter recipe, you’ll need:
- 4 sticks of unsalted butter
- Heavy bottomed pot (small) or sauce pan
- Slotted spoon
- Ladle or cheesecloth
This recipe will make about 8 small servings for dipping.

RECIPE STEP ONE: MELT THE BUTTER OVER LOW HEAT
Add four sticks of butter to a heavy-bottomed metal pot.
Slowly melt the butter on medium low heat, taking care not to move or hit the pot in order to allow the milk fats and water to separate.
Do not allow it to boil.
RECIPE STEP TWO: SIMMER
Once the butter has melted, gently simmer the butter until a white foam starts to form on top.
These are the milk solids rising to the top.
RECIPE STEP THREE: REMOVE THE MILK SOLIDS
Use a slotted spoon to skim the white foamy milk solids from the top.
Discard the milk solids (the foam).
(I just put mine down the disposal.)
RECIPE STEP FOUR: CONTINUE SIMMERING
Continue simmering the butter for 10-15 minutes until the butter turns a clear, gold color.
You may also see dark solids at the bottom. You will filter these out.
Don’t stir or mix the butter!
RECIPE STEP FIVE: STRAIN THE SOLIDS
Ladle the golden butter liquid into a cheese cloth covered jar to remove any of the solids.
When ladling, do not go all the way to the bottom of the pot. Stay in the middle to get the gold butter.
Serve immediately for your seafood boil party or as a dipping sauce for crab legs!
Store any leftovers in an airtight container in the refrigerator.
