How To Boil Corn On The Cob Recipe
This traditional corn recipe is probably my least favorite way to eat cobbed corn now (after having the other corn on the cob recipes below), but it is still tasty!
I think the biggest mistake people make with boiling corn on cob is that they let it boil for too long. When this happens, you lose that fresh crunch of corn and the juiciness of the sweet corn. So, don’t cook corn too long!
To Boil Corn On Cob:
- Remove husks and silks from fresh corn.
- Bring a large pot of water to boil (enough water to submerge the corn cobs). You can also add a stick of butter to make a “butter bath” for your corn!
- Using tongs, carefully place corn in water and boil for 5-7 minutes, or until the corn kernels are just barely soft when pierced and the corn is bright yellow (if using yellow corn).
- Drain and serve immediately with melted butter and salt.
RECIPE TIP: You will see many boiled corn on cob recipes out there that say to cook the corn for 10-13 minutes. I think this is way too long for corn and often results in mushy corn. I’ve even seen common recommendations to cook corn cobs for 20 minutes, which is WAY too long and will make the corn kernels firm and chewy! If you like a softer corn on the cob, then cook it longer than 5-7 minutes, but we don’t like cooking corn longer times in our house.

How To Make Mexican Street Corn On The Cob (Elotes Recipe)
Mexican street corn on cob, or elotes, is the traditional street corn recipe and is now probably my favorite way to eat roasted ears of corn!
After roasting the corn on the cob (grill it if you can, but boiling it is fine, too), you slather it with the creamy street corn sauce and top it with chili powder and Cotija cheese.
If you can, grill the corn on the cob. It gives it that extra charred corn flavor that really pops with the strong sauce flavors.
TO MAKE TRADITIONAL MEXICAN STREET CORN ON COB, YOU’LL NEED:
- Roasted corn / grilled sweet corn on cob (fresh corn cobs)
- Sour cream or Mexican Crema
- Cotija cheese (Mexican cheese) or queso fresco

Mexican Street Corn Off Cob (Esquites Recipe)
Mexican street corn off cob, or esquites, is also called Mexican corn in a cup because it is often sold my street vendors in a cup with a spoon and a fresh wedge of lime.
(Some people sometimes call it Mexican street corn salad.)
It’s one of our favorite corn dishes in our house! We make it as a side dish, but (honestly) I like it as a lunch salad on it’s own.
I esquites warm or at room temperature, but some people eat it cold. (It reheats easily!)
If you are making it ahead of time, I would leave off the toppings until you’re ready to serve it and then add them add the party.
