The Best Chili Lime Skillet Corn
This one pot recipe is made by frying corn and then adding in the other ingredients — all in one pan, which makes for easy clean up after cooking. If you’re looking for easy one-pan recipes, this is it!

What can be used instead of queso fresco cheese?
You can make this corn in the skillet recipe with any of these cheeses:
- Cotija cheese
- Feta
- Fresh parmesan
- Romano
- Parmigiano Reggiano
RECIPE TIP: Cotija cheese is the most like queso fresco, but it can sometimes be hard to find.
How To Get Corn Off The Cob
If you are making skillet corn with fresh corn, then you’ll want to cut the corn off the side of corn cob. (This is my favorite way to make skillet corn off cob.)
To cut corn off cob:
- Stand the fresh corn cob on the end on a cutting board (where it won’t slip).
- Carefully cut a knife down one side of the corn, being careful not to cut too deep into the corn cob.
- Rotate the corn and do another corn side until all corn sides have been cut off cob.
- Then, use the corn cut off the cob for your skillet seasoned corn recipe.

Can you make skillet corn with frozen corn?
You can make this corn recipe with frozen corn. However, I really like it better with fresh corn (and it’s easy to cut it right off the corn cob!), but you can also use frozen corn or canned corn this skillet sweetcorn recipe.

Best One Pot Recipe With Corn!
If you wanted a full one-pot meal recipe with meat, you could easily add in grilled chicken (great for a leftover rotisserie chicken recipe!) or even cooked steak cubes.
Also, be sure to garnish this corn recipe with a lime wedge, but taste it first before adding.
I like the extra lime in my fried corn, but no one else in my family likes extra lime. I really think it’s a personal preference.

Chili Lime Skillet Corn
Ingredients
- 1 Tablespoon unsalted butter
- 3 cups corn fresh off the cob, canned corn, or frozen corn
- 1/4 cup Hellmann's mayonnaise
- 1/2 cup queso fresco crumbles plus extra for topping
- 1 lime juiced, plus extra lime wedges for garnish
- 1 small fresh jalapeno seeds removed and finely chopped
- 2 green onions finely chopped
- 1/2 teaspoon chili powder plus extra for topping
- 1/2 teaspoon garlic powder
- 1/4 cup fresh cilantro (optional)* chopped (reserve a little for garnish)
- Salt and pepper to taste
Instructions
- Melt butter in a heavy pan. Spread corn kernels in a single layer in the pan. Roast for 10-15 minutes, stirring frequently, until the outsides of the kernels have browned. (Some will have a charred look and that's okay, but don't let them burn!) Remove pan from heat.
- To the roasted corn, add mayonnaise, crumbled cheese, and lime juice. Stir until corn is coated.
- Add in jalapeno, green onions, chili powder, garlic powder, and cilantro. Stir until combined. Add salt and pepper, to taste. Stir.
- To serve: Sprinkle with extra crumbled cheese, chili powder, and chopped cilantro. Serve warm immediately with a lime wedge garnish.
