If I had to choose to only make two crock pot soups ever again, it would be these two soup recipes.
Plus, they make good comfort soups for cold winter day cooking or snowstorm recipes to warm you up after playing in the snow.
These versions are both chicken soups, but I love that you can easily make them vegetarian soup recipes and they’re still just as good!
Creamy White Bean Chicken Chili
This white chicken chili is such an easy slow cooker recipe that it’s on our regular recipe rotation, especially for easy winter dinner recipes when we’re looking for comfort foods.
I also love that you can keep all the stuff in the pantry for emergency cooking / power outage pantry cooking if you need it! (Just keep canned chicken in the pantry and substitute it for chicken breasts.)
If you’re looking for a vegetarian soup recipe, you can leave out the chicken and make this a bean soup and it is just as flavorful and amazing.
Also, you can make this a spicy soup or a mild soup, depending on the spiciness of the salsa you use.
Southwest Sweet Potatoes and Chicken Soup
This recipe for crock pot sweet potatoes soup is a family favorite!
This is a hearty soup recipe that makes it more like a stew which, in my opinion, makes it the perfect cold day comfort food recipe.
Southwest sweet potato and chicken soup is a semi-spicy soup (adjust your own spice flavorings) that can also be made without chicken for no meat soups.
The cornbread dumplings completely optional, but I really think it adds to this soup for a complete meal.
