This cookie Oreo brownie recipe is such a simple dessert recipe that you’ll kick yourself for not making it sooner.
I call it Oreo cookie bars, but you can use any brand of cream cookies that you have. (We just always have Oreos in our house because that’s what my husband likes, so that’s what I use.)

Best Tip For Crushed Oreos
For this simple recipe, you need Oreo pieces.
You can put the Oreos in a food processor like this to crush them, but I happen to think it pulses the cookies too fine. I like the inconsistency of cookie chunks in the cookie bars when you smash the cookies by hand.
If you’re cooking with kids it’s fun to let them crush the Oreo cookies.
Place the Oreos in a resealable bag, position the bag on a cutting board, and let the kiddos smash the Oreos with their hands or the end of a rolling pin.

How To Make Oreo Cookie Bars Step By Step
Everyone loves this dessert with Oreo cookies and we never have any leftovers! Plus, it’s ready in just minutes, so it’s even a good last minute recipe.
This is an easy make ahead recipe to make and take for potluck party foods. They travel really well in the car. Just be sure to put wax paper between the layers so they don’t stick to each other.

This is an easy recipe to double and I often do that if I need it for recipes for groups or recipes for crowds.
RECIPE TIP: Do NOT use Doubles Stuf Oreos for this recipe. It turned out to be too creamy for this recipe when we tried it one time. If you do, you’ll need to adjust the butter and marshmallow ratios.
Oreo Cookies and Cream Bars
Ingredients
- 25* Oreo cookies NOT Doublestuffed
- 3 Tablespoons butter
- 6 cups mini marshmallows (1 10-ounce bag)
Instructions
- Place Oreo cookies in a resealable bag and crush them using the end of rolling pin or a cooking mallet. (Doesn't need to be uniform pieces. I leave the pieces all different sizes.) Reserve about 1/4 cup cup and set aside to sprinkle on top of the cookie bars (or, crush extras for the topping, which is what I do).
- Place a piece of foil in the bottom of a 8x8 or 9x9 baking pan with some hanging over the edges. Spray lightly with cooking spray. Set aside.
- In a medium size pot over low heat, melt butter.
- Add marshmallows to melted butter. Stir until all marshmallows are covered in butter. Continue stirring occasionally until all marshmallows are melted.
- Remove from heat and stir in crushed Oreo cookies until completely combined with the marshmallow and butter mixture.
- Spray a spatula with cooking spray. Using the spatula, spread cookie marshmallow mixture into prepared pan. Sprinkle additional crushed Oreos on top and lightly press down**. Allow to set up for 10 minutes (or until completely set.) If you're in a hurry, you can place in the freezer to set. Cut into bars and serve.
- Store in an airtight container.
