You can make easy Mexican street corn recipe off the cob with frozen corn or with fresh corn.
RECIPE TIP: I recommend fresh corn and not canned corn, if you can! I buy fresh corn on the cob and cut it off the cob for this recipe.

If you can’t find Cotija cheese, you can substitute the following cheeses for your elote recipe off the cob:
